Anna Olson's Black Forest Bars

Black Forest Bars

The combination of chocolate and cherries that defines a black forest cake is found in these dainty squares, along with a little coconut and just a touch of citrus.

Makes 1 8-inch square pan: 36 squares

Base:

• 1 cup (250 mL) all-purpose flour
• ¼ cup (60 mL) cocoa powder, sifted
• ¼ cup (60 mL) sugar
• ½ (125 mL) cup unsalted butter, cut into pieces

Filling:

• 1 cup (250 mL) tart cherry jam
• ½ cup (125 mL) sugar
• 1 tbsp (15 mL) cornstarch
• 1 tsp (5 mL) vanilla extract
• ½ tsp (2 mL) baking powder
• 2 large eggs
• 1 cup (250 mL) sweetened shredded coconut

Icing:

• 3 tbsp (45 mL) unsalted butter, room temperature
• ¼ cups (310 mL) icing sugar, sifted
• 1 tbsp (15 mL) lemon juice
• 1 tsp (5 mL) vanilla extract

For base, preheat oven to 350˚F (180˚C). Grease and line an 8-inch (20 cm) square pan with parchment paper, so that the ends hang over the sides of the pan.

Stir flour, cocoa powder and sugar to blend. Cut in butter (by hand or with a pastry cutter) until it’s a rough, crumbly texture and press into prepared pan. Bake for 15 minutes and cool while preparing filling.

For filling, stir jam to soften. Add sugar, cornstarch, vanilla and baking powder and stir well. Add eggs and blend, then stir in coconut. Pour filling over cooled crust and bake for 30 minutes, until top is golden and set. Cool to room temperature then chill for two hours.

For icing, beat butter with electric beaters or by hand and add ½ cup (125 mL) icing sugar. Beat in lemon juice and vanilla then beat in remaining ¾ cup (175 mL) icing sugar. Spread over top of chilled squares and chill another hour before slicing into 1-inch (25 mm) squares.

Squares can be stored chilled for up to 10 days or at room temperature for five days.

When I opened the birthday gift from my mother-in-law, I gave a snobby little chuckle. Wow. Didn't see that coming. A Snuggie. As seen on TV. My mother-in-law gave me a blanket with sleeves. Just the thing I'd need to wear as I dragged through the sycamore leaves and to the mailbox to see if my Cash 4 Gold money had arrived yet.

"Oh. It's a Snuggie. I've seen them on TV. Thanks." MIL had a playful look in her eyes, a knowing look now that I think about it.

Didn't she know that I'd lampooned the Snuggie? It was nuts, this impossible wad of fabric that claimed to be cool enough to wear to bars and ballgames with your (lame) friends.

"Try it on," she said.

"OK," I said. This Snuggie was emblazoned with the UNC Tar Heels logo and was easily big enough to accommodate the entire team. What was she thinking?

I used scissors to free it from its wrapping and Snuggie immediately expanded like a life raft, filling MIL's den and threatening to knock Duh Hubby's portrait off the wall along with the collection of candles flickering just below.

"Wow!" I said. If this thing didn't work as a cozy cover-up, it would make a fabulous drop cloth for, uh, Switzerland.

Because of its immensity, it took a few seconds to find Snuggie's actual sleeves. I haven't been this kerflummoxed by an article of clothing since I bought my first thong. Also my last, since you ask.

While the whole family watched, I put Snuggie on as best I could and figured I'd just model it quickly and give everyone a good laugh. Except that's not how it went.

Snuggie had me in its warm embrace. It was like those "rebirth" blankets you hear about people using to re-create the womb experience except without all the gooey placenta.

No! It was nothing like that. Snuggie wasn't some crackpot psychology experiment; it was the real deal. I never wanted to take it off. I would wear my Snuggie everywhere I went, conducting my daily errands, all while wrapped, nay, swaddled in this marvelous monklike monstrosity.

I take back every hateful thing I ever said, thought or wrote about Snuggie. Because there's nothing worse than criticizing something you haven't even tried (I'm remembering you, deep-fried Oreos).

Snuggie has changed my life, forcing me to feel adrift and helpless for 40 minutes every week as I wait for it to finally emerge from the dryer.

So, look elsewhere, hons, if you want to deride the Snuggie or mock its cheesy advertising campaign. Snuggie is a gift from God. OK, actually Walgreens, but still.

Bulgogi Beef

Granulated sugar 1/4 cup 60 mL
Mirin 1/4 cup 60 mL
Sesame oil 1/4 cup 60 mL
Soy sauce 1/4 cup 60 mL
Chopped green onion (white part only) 2 tbsp. 30 mL
Garlic cloves, minced 4 4
Finely grated ginger root 2 tsp. 10 mL
Pepper 1/2 tsp. 2 mL
Beef rib-eye steak (1 inch, 2.5 cm, thick) 1 1/2 lbs. 680 g
thinly sliced (see Tip, page 208)
Cornstarch 1 tsp. 5 mL
Cooking oil 1 tbsp. 15 mL

Combine first 8 ingredients in a large resealable freezer bag. Add beef and marinate in the
refrigerator for 2 hours.
Drain marinade into a small cup. Stir in cornstarch until smooth and set aside.
Heat a wok or large frying pan on medium-high. Add cooking oil. Add beef and stir-fry for
2 minutes until browned. Transfer to a bowl and set aside. Stir reserved marinade and add to
wok. Stir for 1 minute until bubbling and thickened. Return beef to wok and stir until coated.
Makes about 4 cups (1 L).

1/2 cup (125 mL): 228 Calories; 13.3 g Total Fat (2.8 g Mono, 0.7 g Poly, 2.8 g Sat); 45 mg Cholesterol;
10 g Carbohydrate; trace Fibre; 15 g Protein; 688 mg Sodium

Instructions for 8" x 32" Tray

1. Cut upper frame from 1" pine with mitre corners at 7” and 31”. Glue and nail.
2. Place the frame over the aluminum flashing, mark the dimensions and cut metal to size. (Heavy-duty scissors can be used.)
3. Place the frame over the plywood, mark the dimensions and cut plywood to size.
4. Cut four legs from 2” pine. (Legs measure 2” square.)
5. Paint all wood pieces black.
6. Glue metal to plywood backing.
7. Nail metal backing to frame.
8. Nail and glue the legs through base at corners.
9. Stylize. Place glass votive holders (22) in the tray. Place acrylic diamonds around the base of the votive holders. Place a tea light or battery tea light in the holder.

Caution: Never leave burning candles unattended, and always keep out of reach of children and pets.

Anna Olsen's Chocolate Pretzel Salami

Chocolate Pretzel Salami

These no-bake cookies are a good laugh – when sliced they look like real salami, but they have a great salt/sweet contrast, and a definite kick of brandy.

Makes about 4 dozen slices

• 1 cup (250 mL) good quality chocolate chips
• ½ cup (125 mL) sugar
• 3 tbsp (45 mL) golden corn syrup
• ½ cup (125 mL) brandy
• 2 tsp (10 mL) instant coffee powder
• 2½ cups (625 mL) chocolate cookie crumbs
• 1¾ (425 mL) cups pretzel pieces, pulsed in food processor

Melt chocolate chips in microwave on medium, stirring every 10 seconds until smooth. Transfer chocolate to a large bowl and stir in sugar and corn syrup. Stir brandy and instant coffee together to dissolve, then stir into chocolate mixture (if you wish, you can bring the brandy to a simmer to cook out some of the alcohol — take care to watch for a flame). Stir in cookie crumbs until blended then mix in pretzel pieces. Dough should be shiny and still pliable.

Place a third of the mix on a sheet of plastic wrap. Roll up in the shape of a log about 8-inches (20 cm) long by 1½-inches (4 cm) across and repeat with remaining two-thirds of dough. Chill for 3 hours.

To serve, unwrap dough and slice into coins ¼ inch (5 mm) thick.

Cookies will keep up to two weeks in an airtight container.

Ahhh holidays...

While recently on holidays, I was doing LOTS of observing of parents traveling with small children. Hannah is a good traveler for the most part, but it doesn't stop me from being entirely tense from the minute we leave the house to the minute we roll into our hotel room.

So it helps if there are good products to make life easier.

Can I just say the the Snack Trap (with the very, very much appreciated tether) is a LIFESAVER. I saw other Mom's with a snack trap tied to the stroller with string. The tether held the snack trap, Hannah's new little wallet (filled with empty giftcards, since her favorite thing to do is empty MY wallet of debit/credit/giftcards), toys, etc. So, so so handy. So handy that when it accidentally got left at The Rainforest Cafe, Jeff had to sprint back and make them dig through the kitchen to find it (they did, Thank God!)

Also saw so many mothers with Hooter Hiders/Bebe Au Lait-- totally handy, totally discreet. In fact, the only reason I noticed them was that I recognized the patterns. Otherwise these nursing mothers blended in seemlessly with the hustle and bustle around them.

Also, at Disneyland, there were plenty of parents with toddlers or preschoolers and new babies. How were they handling it? One parent would carry the baby in a sling or carrier, while the other managed the stroller and other small children. Many parents had child harnesses (or "leashes" as they are sometimes called) but most were sitting in the stroller, and the kids were walking or riding along.

(Side note: I used to (before I had a kid) be a person who judged a child on a tether. Granted, the ones I used to see were very leash-like (while the new ones are mostly little backpacks that look like a puppy or monkey, and the parent holds the tail). Now, having a small child who can run at the speed of light, and who likes to be part of the action and not restrained in a stroller, I totally get them. Hannah didn't need to use one (like most of the kids I saw) but I still think they are smart and safe and get it when parents choose to use one.)
